Having a Day ~ by Sam

You ever one of those days? You know the ones.  When you thought you were just having a moment, but then, you looked up, and it was, like, 4 or 5 hours later, and you’re STILL having the same moment, so you really had to admit to yourself, you were having A DAY.

I don’t mean in the sense that, say, you and one of your very best friends have chosen your absolute favourite thing to do, and said to one another, with great enthusiasm (in cartoonish unison, for maximum effect): “Let’s make a day of it!”  That actually sounds like fun.  I would love to have that kind of day.

I mean, you know, having a day. 

Like, when nothing in particular is wrong, but, it’s just…look…maybe you just really don’t like eggs.  You don’t, okay?  And so, you know what?  Screw eggs, and why are they one of the, like, 19 foods you can eat without feeling terrible?  And of those 19 foods, why are there only roughly 4 proteins ~ and why did one of them have to be eggs?!  The truth is, you never liked eggs; and now you have to eat them all the time, and you’ll be damned if it’s not making you feel a little better, which is particularly frustrating.

Then, you know what else…if you’re gonna hate eggs, maybe you don’t like walking all that much, either.  You were a runner, for crying out loud, and walking is not running.  It’s really not very fun, even on a good day, and maybe your foot hurts; or maybe walking is just slow, and kind of boring, to be honest.  Maybe you just walked a little bit farther than you intended, and now you have to walk back home, and, frankly, you’re just not enjoying it.

By now, you’ve probably made it to the evening.  Perhaps, you think it might be a good idea to try to unwind with a little yoga, but there are things you have to do first: things like laundry and dishes, and other chores, which ~ let’s be honest ~ nobody likes doing when they’re already feeling grumpy.  (Well, I don’t know.  Maybe somebody does, but it’s not me.)  Then there’s PT, and then, finally, you can probably do some yoga and try to relax.

But you probably won’t enjoy it.   Because it’s the same day, and you’re still having a day.

Yeah.

It’s one of those days when, for no particular reason, you just wanna stick out your tongue at the whole world.

And you didn’t even win the lottery.  Again.

Luckily, I get to try again tomorrow.  I mean, not to win the lottery.  Just, you know, with the whole day thing.

But I think I’ll skip the eggs, just for a day or two.

Food & Stuff ~ by Sam

(in which I swear once, which is not a lot, since I am talking about food & stuff)

Alas, it was not meant to be.

I really thought Marian might pull through, until I awoke one day to find nothing but two bare stalks.  I think, this time, she truly is a goner.  I am so sad.  The next time I was at the nursery, I asked what I might be doing wrong for my maidenhair ferns, and was assured that I have done exactly what I should.  It seems my home just might not be the best environment for them, for whatever reason. It was suggested that I try a different, heartier variety of fern.  We selected this lovely sliver lace fern, which i promised to not to name, just in case…then promptly name Mathilda as I was pulling out of the parking lot.  Apparently, all of my plants will be named after literary characters.

I am going to try to refrain from buying (or killing) any more houseplants for some time.  Instead, I will work on trying to keep alive the ones I have.

In the interest of posting about something other than houseplants ~ ‘though I do love them ~ I thought I would share some of the meals I’ve been eating.  Because no one ever does that on the internet.  It’s a totally revolutionary idea.

I know.  Like, half of you ~ more than half of you ~ already walked away.  That’s okay.  The rest of us are still here, and we like each other just fine, thank you very much.

But food. Well, you know, food and I have a storied history.  I loved food when I was a kid.  I loved some foods other people might find really weird.  I ate stuff like butcher bologna and fried brains (no, really, y’all ~ I tell my kids I’m actually part zombie, as a result of this culinary adventure), and slim jims, and those hot sausages that came in wrappers like slim jims.  I still love red beet eggs,  and my mom’s ziti and shoofly pie ~ all of which I am pretty sure I am not supposed to eat, and that is a travesty, by the way.  I ate crabs and scallops and lobster and shrimp, and clam chowder.  I mean, I grew up in Maryland.  We ate seafood.  It’s kind of a thing.

Now…well…

First, I had an eating disorder.  When you have an eating disorder, you don’t hate food.  I think that’s a common misconception.  Maybe it’s more of a love/hate relationship.  I became positively obsessed with food.  I knew everything about it.  I was obsessed with what nutritional value of everything, how many calories it had, what was the fat content, sugar content, serving size… Not that any of it mattered.  I wasn’t actually eating much of it.  I did love to cook it.  For other people.  And watch them eat it.

Then, I became (and have remained) vegetarian.  That’s working out okay for me.  I mean, y’all can have your brains.  I have to say, I am pretty much over that.  I was vegan for about 8 years, and I felt pretty good at the time, but I’ll admit, it was difficult, especially when I got pregnant with my first child.  That’s about the time I decided to start eating cheese again.  I really like cheese.

Which totally doesn’t matter.  Cheese hates me.  With a passion.  It turns out, I am allergic to milk protein.  So, some years (yes, it took years ~ many, painful years), and many health problems later, I gave up all dairy products.  I miss cheese so much it hurts ~ but you know, not as much as that feeling in my throat when I ingest it, so this is really much better.  (I’m also now allergic to shellfish, which I had already given up eating, for what it’s worth, which doesn’t impact my diet, but is a weird side note considering that I ate it as a kid, I guess.)

Also, (and, well, really, I should have thrown this part in a while ago, because it originally reared its ugly head in high school), I have IBS.  That’s Irritable Bowel Syndrome, in case you didn’t know, and, as is evidenced by the name, it is just a festival of fun times, as I am sure you can imagine.  I won’t go into detail.  I mean, it involves your bowels, being irritable.  You can figure out what that means.  Or, you know, google it, if you want to, but I really can’t imagine why you would want to do that.

So, here I was going along, doing my thing, trying to be healthy ~ and I was really making a concerted effort, too, because I had some long-standing terrible habits to break.  Habits like not eating breakfast.  Forgetting meals altogether.  Eating chocolate for a quick burst of energy to get me through to the next meal, and then not taking time for the next meal.  Eating things like the crusts of kids’ pizza, the ends of their poptarts, and the few green beans that were left in the pan, and thinking, “That was probably a meal, right?”  Drinking a frappuccino instead of lunch.

I figured this was bad for me, bad for my body, and a terrible example for my kids, and I decided to do something about it.  I started doing things like eating more vegetables and fruits.  I love roasting vegetables ~ broccoli, asparagus, brussels sprouts, cabbage ~ especially with lots of fresh garlic, balsamic vinegar and olive oil.  I love artichokes.  I don’t like fruit, but berries are good for you.  I ate berries, even though I don’t like them.  I actually like pears, and some kinds of apples, and I can eat about half of a banana, sometimes, but only half.  I was trying with the fruit.  I started drinking coconut water. You hear so much about how good for you it is.  Man, I really bought that.  I used coconut milk in my coffee drinks, instead of soy, because I know too much soy is bad for you, and I already use some soy.  I was eating whole grains.  Oh, and beans.  I was trying to make sure to get enough protein, but from a variety of sources ~ nuts and nut butters, seiten, quinoa, seeds, tofu and tempeh, some commercially available meat substitutes, and beans.  I love beans.

For some reason, my digestive issues got worse.  At first, I thought, maybe it was just that I was eating meals that were too large, so I started eating smaller, more frequent meals. Then, I thought maybe it was just that was still getting used to eating well ~ maybe my body was adjusting to digesting all those fruits and vegetables and stuff.  Maybe it was too much of a transition all at once.  I even thought maybe it was a medication side effect…or maybe it was a symptom of something else.

The truth was much simpler: my IBS was completely out of control.

So, after one doctor’s visit led to another doctor’s visit, which led to some labwork, and a referral to a gastroenterologist (and more labwork ~ with more to come), I find myself on a very restrictive diet.  I am currently on a gluten-free low FODMAP diet, and it is the most restrictive diet I have ever had.  I am forced to be obsessed with food again, which is a little bit scary, to be honest, and I have to be careful not to fall back in to old patterns.  I think the key, in that regard, is to keep eating the food.  That, and the fact that the goal this time is to keep the food in my body and maybe actually gain some weight, which is really weird for me.  But it must all look frighteningly familiar to people who  have known me through all of this, and it must be worrisome for them, too, because here I am, again, very thin (due to medication) and obsessing about food.  My understanding is that at least some of this could be temporary, and then we can start trying to figure out what foods, specifically cause problems for me.  For now…

Ah, well, it is what it is.

If you are interested, you can look up the low FODMAP diet. For me, it’s basically like this: Make a list of all of your favourite foods. Write: “DON’T EAT THESE” at the top. Now, start eating eggs again.  What?  You don’t like eggs?  Fuck you.  Eat them anyway.  You don’t eat meat, and there are only like 4 other protein sources on this list that you’re allowed to eat.  Eat the freaking eggs.

If you have IBS, or another digestive disorder, you might want to talk to your doctor about whether or not this plan might be helpful to you.  I know, I just made it sound super appealing.  (sorry.)

So, maybe I make it all sound very dire, but I am eating a lot of beautiful, delicious foods.  Most importantly, I seem to be getting it right, most of the time.  Eating out is still difficult, because it’s a bit of a craps shoot.  You know, you order the potatoes, and hope they aren’t seasoned with anything your gut’s gonna hate.

Feeding the whole family is a challenge, because my needs often require a little more creative meal-planning ~ and it does get a little bit redundant, sometimes.  I’ve hit on some recipes I can make that we all like, and, at the very least, I can often make a meal from which I can easily adapt something for myself.  If not, I usually have leftovers in the fridge, because I tend to cook for more than one meal at a time, anticipating that need.  I am still learning, but I’m getting there.

In the end, if I feel better, am able to keep the foods I eat in my system long enough to actually process the nutrients my body needs from them, and do important things like socialize with other humans, take my medication and, you know, absorb it so that it actually works, I think that’s a vast improvement.  You know, when things like that start working, the hope is that I will be able to do more of the things I want to be doing.

I would say things are looking up.

Today, for instance, I was able to get up and go with Shane to help sort Girl Scout cookie orders at the warehouse, and bring back all of the cookies Kaia intends to sell this season.  I loaded and unloaded cars, grabbed a coffee, came home and practiced banjo, cooked dinner, sat down and wrote this very long blog entry.  Now I intend to clean up a bit, and try to get my PT done before bed.  It might not sound like a lot, but I think it’s not bad for a Saturday with chronic pain and a digestive disorder.  I mean, let’s be honest: there are still a lot of days when I just want to pull the covers back over my head as soon as I wake up, but, you know, I have a Girl Scout, and those cookies aren’t gonna drive themselves home.  My banjo’s not gonna play itself.  I mean, come on ~ I’ve got stuff to do.

A Good Egg ~ by Sam

I keep trying to convince myself that I like eggs, because they are approved for my diet. The thing is, I don’t; and, to be honest, I am not convinced they like me. They are high in protein ~ although the reasons for this freak me out somewhat, and I am probably a wannabe vegan, having been one for about 8 years in my youth ~ and the rest of my diet is so limited that I feel I really should give it the old “college try” (but not “college,” really, because some of college would account for part of my vegan years).
 
Anyway.
 
I’m trying. To like eggs. I like egg salad, but I am very particular about it, I have to be in the mood for it, and it probably has to be my egg salad, in just the right amount, and probably on toast, maybe with a tiny bit of lettuce. Usually. The other day, I scrambled a single egg with all of the vegetables I could find that I could possibly eat, and some fresh herbs. I added salt, pepper & nutritional yeast, then put on the lid and let it sort of steam a little at the end. It took on an almost soufflé-like texture. The only reason I could tell there was egg involved was because it stuck together. That was okay.
 
Today, I cooked diced potatoes, carrots, and Beyond Meat grilled chicken strips in a skillet. Then, I cooled them and mixed in finely diced egg and all of the ingredients I would to make a curried chicken salad (except that I didn’t have any chutney, which I am not sure I could have anyway, which would be tragic, so let’s not think about that). So, it’s basically like egg, potato & (vegetarian) chicken salad all rolled into one ~ and seasoned with curry.
 
I scooped some in to half of an avocado, and put away the rest to have tomorrow. I think the potato, chicken strips, carrots, curry and dressing did a fine job of disguising the flavour of the eggs. I will eat the rest tomorrow. I am pretty sure the combination of egg and chicken strips must be fairly high in protein.
 
I am still not convinced I like eggs.
The jury is out on how they feel about me.

To Start Anew ~ by Sam

2017 finds us all poised at the breaking dawn of a fresh, new year.  A year full of hope, and promise and possibilities.  The problems, the struggles, the tears, the regrets, the trials, the toils of 2016 and before lay behind us, and what lies ahead is infinite and unknown.  People encourage us to move only forward, to cast off the negative, never looking back; but, like Lot’s wife, we find ourselves compelled to cast that glance aft, and then…

Then what?

Isn’t it our history that informs us?  Isn’t it our past that makes us what we are today?

And so, I offer this advice for the New Year: Don’t attempt to make a brand new start, as people suggest.  That is far too tall an order for anyone, and destined for failure.  Sure, go ahead, move forward.  But don’t just put one foot in front of the other and trudge blindly on.  Move forward informed by the past, strengthened by your experience, hardened in your resolve ~ battle-scarred and imperfectly-perfect, as are we all ~ ready to conquer whatever life happens to throw your way.

In that spirit, I give you my Resolutions for the New Year, in no particular order:

Be Kind.
Listen.
Visit Places.
Make Things.
Plant Things.
Play Music.
Take Care of Myself.
Cook.
Write.
Read.
Dance.
Laugh.
Sing.

I might clean some stuff, too.
Maybe.

I think I can handle that.

Wishing you and yours Peace, Love, Health & Happiness in the New Year and beyond.  With all of those things, how can we possibly go wrong?

I Ate a Sandwich – by Sam

The other day, I was out shopping, running some errands, picking up dry-cleaning, and I realized, at about 11-ish, that I hadn’t eaten more than the sample of cranberry bread and coffee at the grocery store.  So, I decided to stop and grab a sandwich at a nearby sandwich shop.  It’s funny, I think, that it was a sandwich.  By “funny” I mean, “coincidental,” or, perhaps, “unintentionally ironic,” because, you see, I am periodically told that I need to “eat a sandwich.”  Really.  This comment usually comes from rude strangers who have decided that, for some reason, it’s okay to make comments about my weight or my body because I am thin.  It’s okay, they think, to tell me that I “look anorexic,” that I need to “get a little meat on my bones,” that they “prefer women with curves” or even to ask me if I think I look attractive like that, or what example I think I am setting for my children.  Yes, these are all comments that have actually been made directly to me by strangers.  Once, a few years ago, I had a guy at a bar tell me that I was so skinny I looked like a Cancer patient, after I turned down an advance from him.  At that point, I was probably actually sick, but really?  Because, a second ago, you were interested.

What’s even weirder to me is when friends say things like this to me.  It happens.  I understand when they express concern.  They tell me I am getting too thin. They ask if I am okay.  I get that.  I mean, that’s cause for concern.  Some of them know my history.  I’m an eating disorder survivor.  So, yeah, okay, that’s reasonable.   Even if I they didn’t know that, seeing someone lose weight…well, I guess it can look unhealthy at a certain point.  They know my health, in general, is an issue.  I can see why it would worry them.  It’s still hard, when it happens, but it’s reasonable.  But that “sandwich” line?  That’s gotta go.

The problem is, right now ~ and, as it turns out, maybe for a long time ~ I have to be on a particular medication.  I have to be on it. I don’t really want to go in to detail about what’s going on, but it’s nothing terribly earth-shattering.  The end result is that I have to take medication daily, which solves the problem, and the only caveat is it affects my weight.  It has caused me to lose weight.  It increases my appetite, which is awesome, but it does make it difficult for me to gain weight, which is not great.  However, under the circumstances, I can’t worry about that.  So, I guess I should take this opportunity to assure those close to me that I am not relapsing into my eating disorder.  I’m actually doing quite well, and eating better than I have in years.  I feel pretty great.  But I am very thin.  I’m sorry.  I know that might look frightening to some of you, particularly those who have known me for a long time.  I know it might be hard to understand.  I am going to ask you to try.  To trust me.  I’m doing okay.

I will ask my friends to please avoid the “eat a sandwich” line.  Maybe you think, by saying something like that, you are keeping it light, but still addressing the issue?  It’s really just kind of mean.  That just doesn’t need to be said.  Frankly, sandwiches aren’t my favourite, food is a bit of an issue for me, my weight is always going to be a sensitive subject, and I am very self-conscious about it.  Besides which, it’s just not the kind of thing on which people need to comment.  Aren’t people taught not to make personal comments anymore?

As for the strangers who make those kinds of comments to anyone: stop.  Just stop.  Whether you are saying these things in person or online: stop it.  Why do you think you get to do this?  Who cares what you like?  Keep it to yourself.  You’ll tell me you have a right to your opinion, and sure you do, but here’s the thing: that person you’re talking about might be very thin for any number of reasons.  Maybe they actually are anorexic.  Did you ever stop to consider that?  Why is that term thrown around like an insult?  You know, its an actual illness.  It’s not a choice people make because they are trying to be cool, or they think it’s beautiful.  Maybe they’re just naturally thin, in which case, who do you think you are telling them how they should look, and that they are setting a bad example, or that they are unattractive, just because they look the way they do?  Maybe they have some kind of health problem that causes them to be very thin.  What if that person you just said looks like a Cancer patient actually IS a Cancer patient?  Aren’t you a freakin’ rockstar, now?  I mean, whatever happened to “if you can’t say something nice, don’t say anything at all?”

This brings me back to the sandwich shop.  I was really very hungry, so I ordered my sandwich, with all the toppings I wanted, and the guy behind the counter asked me what size I wanted.  I had no idea.  I just thought they had the one size.  He explained that they had three sizes: 7″, 10.5″ and 14″.  I chose the 10.5″ sandwich.  He paused.  I waited for him to ring up my order.

“Um,” he said, finally, “Are you sure?  That’s about as big as this bag.”

He was looking down at me from behind the counter, showing me the bag, so I could fully  understand the gravity of my decision.  I was sure.  I wanted a really big sandwich.  For godssake, I can measure.  I mean, I’ve been using standard 12″ rulers since grammar school.  I buy 12″ subs all the time.  I can guess roughly how large a 10.5″ sandwich is! Now, I’ll be honest, I had a lot of errands to run, and I didn’t really plan to eat the whole thing all in one sitting, but, while he stood there judging me and my sandwich, I didn’t see any reason to explain that to him, so I just said, “Yes.  Ten and a half inches.  Please.”

“Okay,” he said, still sounding skeptical.  It kind of pissed me off.

You guys, I can’t win for losing.  I’ve got people telling me to “eat a sandwich,” and people telling me I couldn’t possibly eat THAT sandwich.  If a larger person comes in and orders the small sandwich, does he say, “Oh, I think you’re gonna need a bigger sandwich, buddy,” or does he judge them in another way, and offer them the lettuce wrap?

I guess I’ll never know.  I sat outside and unwrapped my sandwich.  A guy who looked exactly like George Lucas walked by.  I like to think it was George Lucas.  I mean, not many guys look exactly like George Lucas.  I ate 5.25″ of sandwich, then wrapped up the rest to eat during my errands.  It was a very good sandwich.  A very large, very good sandwich, even though I was a little pissed off about the guy’s attitude.  I ate it.  And I am still thin.  I still have only very minimal curves.  And I still don’t give a rat’s ass what some stranger prefers.

So Much to Say ~ by Sam

After seeing how well the photo-heavy post worked last week, I decided to do another this week.  Perhaps, I will just keep posting that way, just to keep posting something.  Shane has promised to post about the computer he is building ~ oh, the trials and tribulations of the Great Computer Build of 2016! ~ when he has time, but he is, as usual, working several jobs at once, so it might be some time before he gets to that.  Well, he is not working several jobs at the moment.  At this particular moment, he is sleeping, as he should, after a much-needed night out for just the two of us at Cheesecake Factory (and, yes, there are things I can eat there ~ there is a Vegan Cobb Salad, in fact, that is quite good, and almost as large as I, to boot, so I will be eating that for days) and a very heavy work week.  Kaia is at a friend’s Bat Mitzvah, and the other kids are still asleep, because it is Saturday morning, so they can sleep in.  Me?  I was up to get the kid to the early Bat Mitzvah, and now I am drinking coffee, writing, and neglecting chores.  Three of my favourite pastimes!

I decided to do another photo-post this week, because I enjoyed looking back on my week.  Sometimes, I feel like the days and weeks and months all bleed together, and I find myself gasping for air and thinking, “Wait!  Stop!  What??  It’s April?!!  When did that happen??  Where were January, February, March???  Didn’t we celebrate Christmas???!!!!  Slow down already!!!”  It is my hope that, by taking time to make a regualr “Week in Review” post, I will remember to pause and appreciate all of the moments, big and small, that make up our lives.  As Social Distortion told me: “Life goes by so fast!  You only want to do what you think is right.  Close your eyes and it’s past.”  Yeah, that certainly is the “Story of My Life,” too.  So, I am pausing to think, and I am letting you in, if you want to come along for the ride.  Here it is, then, my week in review:

I had a lot of busy days, but am trying really hard to remember to make healthy choices.  I don’t like much fruit, but I know it’s good for me.  The medication I am on impairs my appetite somewhat, and can, in combination with another medication I must take, cause dehydration, so I have to be very careful to make sure I:
a) REMEMBER TO EAT (trust me, this is not as easy as it sounds ~ and yes, I realize how ridiculous that is), and
b) STAY HYDRATED
Because I practically live in my car, I have to eat there, sometimes, too; but I am trying to make healthy choices when I do.  Pears I can stand.  They are an acceptable fruit.  Coconut water is very hydrating.  Violets are always a winner.

Right.  That thing about being healthy.  I just said that, and now, I am gonna post poptarts.  It’s true, I made poptarts.  I made them because it’s all good and well to be healthy, but you have to also eat delicious things and have fun, too, and homemade poptarts are really the best poptarts.  You can make your own crust, or just use store bought piecrust (I make my own, because I prefer it, and it’s really pretty simple, using an oil pastry recipe my mom gave me) and you can fill them with jam or, as I did, brown sugar & cinnamon mixed w/ a little almond meal, butter and pinch of salt.  Okay, so they are still a little bit healthy and kind of nerdy, as compared to regular poptarts.  Being a little bit healthy and kind of nerdy, myself, I can live with that.

I added a few little touches to the Alice Garden, including teacup & saucer birdfeeders I made using pieces purchased from a thrift store; and while I wouldn’t call it “finished,” by any stretch of the imagination (and I don’t think I ever will), I do think it is looking quite “Alice-y,” indeed.

Shane brought me a tiny bouquet of flowers; and I picked up two magazines about two pretty amazing people, but I haven’t had time to start reading either of them yet.

I continue to walk and use the free equipment at the local park 2-3 times/week.  I keep thinking about signing up for a gym membership or the YMCA, and I might just do it when it gets too cold for me to be outdoors, but, for now, this is my gym:

Saw yet another positively glorious North Hollywood sunset.  I got to enjoy it with my kids, thanks to a phone call from Shane, to give us a heads-up from our homework and chores.  I love that we do this for each other.  Any one of the five of us will call or text to say, “You have to go outside and see (the Moon/sunset/rainbow,etc.).”  It’s just one of the things that makes us who we are.  I hope we always do that.  As usual, the pictures just don’t do it justice.  The sun was glowing deep red.  I did the best I could to capture it with my little phone camera, but you’ll just have to trust me, it was roughly 8,000x more glorious.

We celebrated Gene Kelly’s birthday by watching a bunch of his best dance numbers (which pretty much means all of them ~ they were all his best).

I baked a darned good gluten-free apple pie, if I do say so myself (I do, by the way)!  I didn’t intend for it to be gluten-free, but discovered, after I had already started peeling apples, that I didn’t have enough regular flour to make pie crust.  I did, however, happen to have some gluten-free flour left over from a baking project Kaia had done for her Girl Scout troop, so I decided to just go ahead and make a gluten-free pie crust.  Turned out great, so, should the need arise, I now know I can do this.  Also, I got to have pie for breakfast one day.  Oh, we totally had pie for dinner.  It has fruit, see, and fruit is good for us.

Justice brought home a huge bouquet of sunflowers!  Thank you!

Kaia did her homework outside one day; and it was accidentally left outside.  The next morning, at 5:00 a.m., the sprinklers went off.  Later that morning, as she was getting ready to leave for school, she couldn’t find her homework. I’ll bet you can guess where it was.  Yeah.  We used a hairdryer set on low to dry it.  Only one finished math equation was completely washed away.  Her teachers were very understanding about its rumpled condition.

I FINALLY started painting the detail above the shower in the kids’ bathroom.  I know.  It still looks pretty shoddy here.  Give me some time.  And look with your hearts. The Fox taught me that is only with the heart that one can see rightly.  What is essential is invisible to the eye!  (I’ll post more pics when it’s done.)

Last, but not least, I played my banjo.  I am getting used to the new banjo.  She looks, feels and plays different than the old banjo.  I will still play both, but, for now, I am just playing the new one, because…well, the old one is a little easier to play, I guess; so I feel like I need to work with the new one until I get used to her.  The new banjo is so much heavier!  I feel like I am lifting a small child (or a medium-sized child…who is carrying a small dog).  I love her.  I mean, she’s beautiful, so it was kind of love at first sight, if you believe in that sort of thing.  Have you met her?  Her name is Babe.  Ain’t she a beaut?

 

 

A good, quick meal ~ by Sam

I saw this recipe recently for “eggroll in a bowl,” and I thought it sounded like an interesting idea, but it called for 1/2 cup of soy sauce, which seemed like a lot to me, and sausage, which is meat (which we don’t eat).  Nevertheless, I was intrigued by the idea, so I decided to see what I could do with it.  It helped that I happened to have a package of Trader Joe’s Beef-less Ground Beef, a package of shredded cabbage, and a package of broccoli slaw mix.  At first, I debated using shredded cabbage or broccoli slaw.  Ultimately, I decided it would be even better (and probably better for us) if I used both.  I made miso broth (with baked tofu cubes and thinly sliced scallions) and jasmine white rice to go with it.  I happen to think it’s delicious, so I thought I would share it here.

You will need:

1 TBS vegetable oil
1 package Trader Joe’s Beef-less Ground Beef (or equivalent meat or meat substitute)
1-2 large garlic cloves
1 inch piece of fresh ginger
3-4 scallions, thinly sliced (both green & white parts)
1-3 TBS Bragg’s Liquid Aminos (or soy sauce)
1 tsp seasoned rice vinegar
1 package shredded cabbage*
1 package broccoli slaw*

*Both of these ingredients were found in the produce section at Trader Joe’s, so they are whatever size package is sold there.  Wait.  I’ll look it up.  It looks like the broccoli slaw is 12 oz (and it’s organic, so I guess that’s good), and the shredded cabbage is 10 oz (and washed & ready…and high in Vitamin C).

In a large skillet, heat the oil.  Add the Beef-less Ground beef, garlic, ginger, and scallions.  Cook, stirring occasionally, until lightly browned.  Add soy sauce (or Bragg’s) and rice vinegar, and cook, stirring for 1-2 minutes.  Stir in cabbage and slaw.  Cook, stirring until vegetables have reached desired tenderness.  We like our soft, so, toward the end of the cooking time, I added about 1/4 water and covered it with a lid for a few minutes to steam the veggies.  Then, I removed the lid and turned up the heat, to cook off the excess water.

Like I said, I think it’s very good.  Justice liked it, but the other kids haven’t tried it yet.  I guess it does look a little strange.  I will definitely make it again, even if I am the only one eating it, and I guess, if we wanted to make eggrolls, we could use this as the filling.  Give it a shot, and see what you think.  I haven’t run it through a nutrition calculator or anything, but it would have to be high protein and low carb, right?
